Friends, ever since we got back from China with the newest member of our family, our weekly menu has completely changed! Naturally, at ten years old, “Scout” is used to an Asian diet and we’ve been doing our best to incorporate his favorite foods into our family meals. One thing I wasn’t prepared for, though, is just how often he wants to eat fried rice! While on our trip, I realized that in China, fried rice isn’t just for dinner; it’s something people enjoy all day long, even for breakfast. Every morning, Scout insists on “mama chaofan,” or “Mama’s fried rice.” I literally make it each day before school, except when I’m lucky enough to have leftovers I can just reheat. When you combine the fact that I’m not exactly Julia Child with the idea of me cooking before the sun is up, you can guess just how easy a recipe has to be for this to work.

Easy Breakfast Fried Rice

Today, I’m going to give you the secrets to my Breakfast Fried Rice so you can see just how simple it is to make for your own family. The great thing about it is that you can easily add or switch ingredients to suit your family’s personal tastes. When I make it for lunch or dinner, I just add frozen peas, chopped carrot, chopped garlic, and green onion. Sometimes we swap the ham for chicken or shrimp, or you can just stick with vegetables. There’s really no wrong way to do it.

Before you get started, note that you’ll need to cook your rice ahead of time and let it dry out just a bit; we usually pop some in the rice cooker or boil a few bags in the evening, then place it in a covered bowl in the refrigerator. The next morning, it will be ready to use.

Ingredients

  • 4 cups cooked Jasmine rice
  • 2 T HemisFares Extra Virgin Olive Oil
  • 1 egg
  • 1/2 c diced pre-cooked ham
  • 1 tsp soy sauce
  • 1-2 T sesame oil
  • 1/4 tsp salt

Instructions

  • Heat 1 Tablespoon HemisFares Extra Virgin Olive Oil in wok or large skillet.
  • Place cooked rice in the wok/pan and stir for 3-4 minutes.
  • Push rice to one side of the wok and add 1 Tablespoon olive oil to the other side.
  • Scramble egg in a small bowl. Add ham and egg to the wok where the oil is.
  • Stir until egg is cooked. Mix ham and egg in with rice.
  • Add soy sauce, sesame oil, and salt to taste. Stir and heat for another 2-3 minutes.
  • Serve immediately.

 

You might notice that the rice is a light golden color, not the brown you often see in American Chinese restaurants or frozen meals. The fact is, authentic Chinese fried rice uses a lots less soy sauce than the version we’re familiar with in the U.S. Feel free to add more than just one teaspoon to the recipe if you’d like your rice to be more Western-style. You can also add more or less sesame oil and salt, based on your favorite tastes. Personally, I like to add in a little Yum Yum sauce too, but my boys don’t like it, so I just add it when it’s in my bowl.
