LC’s Easy Guacamole Recipe

If you ask Little Crafter what he wants to do when he grows up, he’ll immediately tell you he wants to be a chef…which is a pretty interesting choice, considering that he’s the world’s pickiest eater and has some sensory issues surrounding food! Nevertheless, ever since he discovered cooking shows {especially his favorite, Chef John Besh} on PBS, he’s determined that he will have his own restaurant and cooking show someday. With that in mind, I try to get him involved in making all kinds of things here at home, so we recently tried making our own fresh guacamole. There are tons of variations and recipes out there; this is the one we came up with using things our family likes!

LC’s EASY GUACAMOLE

Ingredients:
2 ripe avacados
1/4 cup chopped fresh cilantro
1/3 onion, chopped
1/2 tsp salt
juice of 1 lime
minced garlic, to taste

Peel and pit your avocados {LC loves to do that part} and place in a bowl. Add other ingredients and mash together with a fork. Serves 6-8, depending on how much they eat!

That’s really all there is to it. If you like your guacamole to have a smoother consistency, you can put it in a food processor, but we like the chunkier texture you get when you just mix and mash it all really well by hand.

Serve with your favorite chips and enjoy! It’s a great appetizer to have at your holiday parties, and you can easily double the recipe to make a large batch!
