Coconut Lime Rice

Here in the Artsy Family, we often enjoy having rice as a side or part of our main dish at dinner time.  Years ago, I discovered how quick and easy it is to make boil-in-bag Success® Rice, and it’s been my go-to choice ever since.  It only takes 10 minutes to prepare, but can sit in the {BPA-free} bag for up to 30 minutes, so if hubby is running late, dinner isn’t ruined.  Plus, it’s totally mess-free, which is always a plus.  In the past, I’ve always made the white rice and added some butter, garlic, and rosemary for some extra flavor.  But, recently, I found out in addition to their White Rice and Whole Grain Brown Rice, Success® has two new boil-in-bag aromatic rice choices: Jasmine Rice and Basmati Rice!

I was excited to try making something new while still getting all the benefits of the quick and easy rice prep I’m used to.  Honestly, I wasn’t totally sure what the difference was between Basmati Rice and regular White Rice, but I found out that the slender grains elongate 3-4 times when cooked, it has a distinct fragrance and a fluffy texture, and it brings a taste of India to my table.  I browsed around on the Success® Rice website to find a good recipe to try that my family would love.  Since hubby is lactose intolerant, I knew I couldn’t make anything that required cheese, milk, or cream, but when I found this simple non-dairy recipe with coconut milk, I decided to give it a try!

Coconut Lime Rice

COCONUT LIME RICE

Ingredients:
1 bag Success® Basmati Rice
1 Tbsp Vegetable Oil
1/2 cup Coconut Milk
1/4 cup Chicken Broth
Juice and Zest of 1 lime
Salt, to taste

Prepare rice according to package directions.  Combine 1 tablespoon lime juice, coconut milk, oil and chicken broth.  Bring to a boil.  Reduce heat and simmer 5 minutes.  Remove from heat and fold in rice and zest.  Season with salt to taste.

When I first told hubby what I was making, he was afraid he wouldn’t be able to eat it until I assured him that it was totally dairy-free.  Once he realized he could have it, he was excited to be an official taste tester.  Both of us really liked it a lot, and it’s great to have a new twist on an old favorite that we can incorporate into our menu.  It’s quick to make and simple enough that even I, then non-chef, can do it!

  1. Yum, we generally eat basmati rice, we love it. Also just starting to experiment using coconut milks and creams as we are seeing if my hubby is intolerant so it will be great to have another recipe to try 🙂
