Easy, Healthy{ish} Chicken Vegetable Alfredo

Friends, you all know I’m no gourmet chef.  As much as I love to eat, I leave the recipes to professional chefs in the family {my brothers-in-law}.  You’ve probably noticed that it’s a very rare thing to find a recipe here at One Artsy Mama.  BUT.  Today I wanted to share with you something I recently discovered.  It was one of those rare instances when we weren’t all eating dinner together as a family, so for once I got to experiment with something cheesy that my lactose intolerant hubby can’t eat.  It’s  oh-so-delicious, and you know if I made it, it has to be quick and easy, right?  So, here’s my super simple, somewhat-healthy new favorite meal!  
CHICKEN VEGETABLE ALFREDO


Prep Time: 25 minutes 

Ingredients:
– 1 package fettucine
– jar of Alfredo sauce {I loooove Classico Creamy Alfredo and it only has 4.5 g of fat per serving}!
– 1 package Tyson grilled chicken strips
– fresh vegetables, chopped {I used zucchini and broccoli this time, but have also used peppers}
– 1 T vegetable or olive oil  
Bring water to a boil and cook pasta according to box instructions.
In a separate saucepan, heat alfredo sauce over medium heat, stirring frequently.
Heat oil in a nonstick frying pan and add grilled chicken and vegetables.  Sauté until heated well and vegetables are tender. {approx 5-8 min}.
Drain pasta.  Add vegetables and sauce.  Salt and pepper to taste.  Enjoy!

Another great thing about this recipe is that you can make as much or as little as you want.  Since I’m the only one in my house who will eat it, I can cut up just enough veggies for me and use a partial box of pasta so that I don’t end up with so much I’m eating it for a week…then again, that might not be a bad thing…
