I have a problem. Well, my hubby has a problem, which then turns into my problem. Here's the deal. He's lactose intolerant. Which means, he can't eat anything containing milk, cream, or cheese. Yes, that means no ice cream...let's have a moment of silence......

Ok. So on to the problem. There are a bazillion really yummy looking recipes for main dishes and desserts all over blogland, all over Pinterest, and in every cookbook and magazine I pick up, and I can only ever try about 1 percent of them because they all have cheese in them! Or else they contain some other form of lactose hubby can't eat. Sure, I could make the recipe for myself, but let's be real; I don't usually even feel like making one dinner, let alone two. And when it comes to dessert, I feel bad, like I'm rubbing it in that he can't have the really yummy thing I just made all for myself.
So I'm begging you. Please PLEASE share with me some good {I mean really good} recipes that contain no milk, cheese, or cream of any kind. Butter is ok and so are eggs, but that other stuff is a no-no. Help me out here...I'm counting on you!
I'm going to leave this linky open for a good while so you can add to it as you come across new recipes or you can tell your friends and beg them to help me out too! No rules at this par-tay except that if you link anything that's not a lactose free recipe, I'm going to delete it and maybe throw some stinky cheese at you. ;)

Panadillas have no cheese, cream or milk! I am lactose intolerant too. Sometimes my body can handle it, sometimes not. It is nice to have some recipes that don't have those. I will be posting my mother's spring rolls recipe this week, that doesn't have any lactose either, you can make some with just cheese in them for little crafter.

ReplyDeleteI was on a lactose free diet for a while and am a total cheese freak so I did a massive amount of research into this.
Most hard cheeses have negligible to no lactose in them as the lactose is in the whey rather than the curds and the longer the cheese is aged the lower the amount of lactose. This is however only with traditionally made cheeses that are properly aged rather than ones made in the modern way that often have extra milk solids added (therefore extra lactose).
I'm quite a fan of soya yoghurt too, you can get a Greek style one that is nice in place of cream so deserts are less of an issue.
A good friend of mine takes lactase supplements and doesn't have any trouble with milk anymore. Hope some of this is of help.

i didn't know that hard cheeses have less lactose! that explains why my lactose intolerant boyfriend can get away with eating cheese on everything even though he has had to completely give up milk.
Deletewhen it comes to desserts i usually sub out butter for oil or apple sauce. sometimes i'll use soy milk instead of regular milk but the soy i drink has a distinct sweet flavor so it depends on what i'm making (for example it works well in pancake batter but not so much for making mashed potatoes).
in some stores you can also find lactose free yogurt, it sounds really weird but it actually tastes pretty good.
Okay, I added a recipe for Curried Cream of Chicken Soup, which I realize has cream in it, duh. But, you can just leave out the 1/2 C of cream and it will still be totally delicious and lactose free! Also I linked up a super delicious appetizer...I know you asked for main dishes and desserts, but those dates are basically like a dessert anyways, so that's my justification :-)
ReplyDeleteAmy - been a long time reader - but never have commented. There are so many options out there. I found out I have to be dairy free - period. Soooo we went to Almond milk (and you can get that at EVERY grocery store - even WalMart). I would stay away from Soy milk - those are not as good. So any recipe calling for milk - use the Almond. ONLY USE ORIGINAL not Vanilla, not sweetened, not unsweetened... just ORIGINAL Almond milk. The best one Blue Diamond. Not yucky after taste. That is all my entire family (2 young girls as well as hubby) drink now. Also - Coconut milk is really good. And they have Coconut ice cream (Whole Foods or natural food store) which is pretty good too! As far as cheeses go - Cabot Sharp Cheddar is dairy free. Now if it is Caseines (sp?) as well - then I am not sure... there are TONS of sites out there... GLAIRY FREE on FBk has some good recipes and is written by a friend of friend. I hope this helps?! ReplyDeleteI realized the other day that we make a lot of meals with cheese in them and I feel like we need to cut some of that, so I'm totally feelin' ya'. I linked up a shrimp etouffee recipe that has a bit of butter, but no other dairy. Will look for more.
ReplyDeleteThere are now (Finally) a lot more lactose free alternatives available in the market. I don't know if you or your hubby like pudding, but Kozy Skack makes wonderful lactose free versions of chocolate, vanilla, rice pudding and tapioca! There are lactose free ice creams and they have come a long way since I first tried them almost 20 years ago! Also, many sherberts and frozen yogurts are lactose free, but definitely read the labels to be sure!
ReplyDeleteThere are delicious soy cheeses at Trader Joe's, mozarella, shredded cheddar, monterary jack etc. . . that you can use in your cooking and they taste the same as the regular ones.
I know it is hard, but as you go along you will find things that work for you and that you both like the taste of. I can use lactose free milk, which is available in all grocery stores, so I use that in my cereal, recipes, etc .. .

I feel your pain. My hubby's allergic to corn (including anything with corn meal, corn starch, or corn syrup). All of those yummy Mexican dishes are now off limits...
ReplyDeleteSo Delicious brands have almond milk and coconut milk as well as ice cream made from coconut milk. We use plain original coconut milk for cereals. We enjoy the So Delicious ice cream flavor from coconut milk. Like the other blogger said above, we avoid anything with soy milk since they are not good for us as they claim to be. Good luck. You are not alone. In today times, the food is different than what we grew up with. That is why a lot of people are having problems digesting. We need to tell the companies to stop putting chemicals in food for convenience and for longer shelf life. Six months ago, we had to give up couponing and stopped shopping at the regular grocery stores and started shopping at Whole Foods and other grocery store that carry a lot of whole organic food.
