If you've been here at One Artsy Mama very long, you know that most of what goes on here is artsy-craftsy. Kids' projects, "big girl" projects, jewelry, and such...not usually recipes. But I was thinking that today I'd share with you one of our favorites. Yes, part of it comes from a box. And I am okay with that. It comes with the territory when there's a three year old in the house. But it's really tasty, colorful, and healthy, and I thought you might enjoy it too.
SHRIMP PASTA WITH VEGETABLES
You need:

Pasta Roni Butter and Garlic
{You could use any type of pasta/sauce you like, really, but this is our standby. Hubby is lactose-intolerant, so our options are limited, but we both love the flavor of this one.}
1 lb. raw shrimp {we use 31-40 count}
butter, margarine, or spread
minced garlic
yellow and red bell peppers
yellow squash
zucchini
asparagus
Instructions:
1. Thaw and peel shrimp. Add butter and minced garlic {I don't actually measure, I just put in a good sized glop of butter and shake the spice container about 25 times}.
2. Chop vegetables. Add salt and pepper and a small amount of butter.
3. Prepare pasta according to package directions and add a few shakes of minced garlic.
4. Saute shrimp and vegetables in frying pan until shrimp are pink {usually takes 4-5 minutes}.
5. Combine shrimp and veggies with pasta and serve.
This is one of our absolute favorite meals! Besides the taste, one of the best things about it is that it only takes about 10 minutes to cook. I usually do the prep work, like thawing and seasoning the shrimp, while Little Crafter is napping, so when hubby gets home, I just put the water on to boil, chop a few veggies, cook it all up, and we're eating in no time!
